Ingredients

  • 1 each RSPCA Approved Free Range Chicken Whole
  • 3 tbsp butter
  • 1 tsp smoked paprika
  • 1 each lemon
  • 4 cloves garlic
  • 1 tbsp thyme
  • 1 tsp oregano
  • 1 cup couscous
  • 2 tbsp parsley
  • 300 g pumpkin
  • 1 each zucchini
  • 1 each capsicum
  • 2 each onion
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat the oven to 200Β°C.
  2. Pat the chicken dry with kitchen paper.
  3. In a small bowl, combine butter, smoked paprika, minced garlic, thyme leaves, oregano, salt, and black pepper to make a spiced butter.
  4. Gently loosen the skin of the chicken over the breasts and thighs and rub the spiced butter generously under the skin and over the chicken.
  5. Cut the lemon in half and place it inside the cavity of the chicken.
  6. Place the chicken in a roasting pan and roast in the oven for 60–70 minutes or until golden and cooked through. Baste occasionally with the pan juices.
  7. Meanwhile, toss the pumpkin, zucchini, capsicum, and onion in olive oil, salt, and pepper. Spread over a lined baking tray.
  8. Roast the vegetables in the same oven for 30–35 minutes, turning halfway, until tender and golden.
  9. Prepare the couscous as per the package instructions. Typically, this involves pouring boiling water over couscous and letting it sit for 5–10 minutes until hydrated. Fluff it up with a fork.
  10. Finely chop the parsley and stir it into the couscous for a fresh, herby flavour.
  11. Carve the chicken and serve with the herbed couscous and roasted vegetables.
