Ingredients
- 1 each RSPCA Approved Free Range Chicken Whole
- 3 tbsp butter
- 1 tsp smoked paprika
- 1 each lemon
- 4 cloves garlic
- 1 tbsp thyme
- 1 tsp oregano
- 1 cup couscous
- 2 tbsp parsley
- 300 g pumpkin
- 1 each zucchini
- 1 each capsicum
- 2 each onion
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat the oven to 200Β°C.
- Pat the chicken dry with kitchen paper.
- In a small bowl, combine butter, smoked paprika, minced garlic, thyme leaves, oregano, salt, and black pepper to make a spiced butter.
- Gently loosen the skin of the chicken over the breasts and thighs and rub the spiced butter generously under the skin and over the chicken.
- Cut the lemon in half and place it inside the cavity of the chicken.
- Place the chicken in a roasting pan and roast in the oven for 60β70 minutes or until golden and cooked through. Baste occasionally with the pan juices.
- Meanwhile, toss the pumpkin, zucchini, capsicum, and onion in olive oil, salt, and pepper. Spread over a lined baking tray.
- Roast the vegetables in the same oven for 30β35 minutes, turning halfway, until tender and golden.
- Prepare the couscous as per the package instructions. Typically, this involves pouring boiling water over couscous and letting it sit for 5β10 minutes until hydrated. Fluff it up with a fork.
- Finely chop the parsley and stir it into the couscous for a fresh, herby flavour.
- Carve the chicken and serve with the herbed couscous and roasted vegetables.
