Whipped Feta Chicken Bowls with Roast Veg and Herby Rice

Ingredients

  • 500 g chicken breast, diced
  • 200 g feta cheese
  • 100 g Greek yoghurt
  • 1.5 cups brown rice
  • 0.5 bunch parsley
  • 1 each lemon
  • 4 tbsp olive oil
  • 1 each capsicum
  • 1 each zucchini
  • 1 each red onion
  • 120 g spinach
  • 2 cloves garlic
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat your oven to 200Β°C and line a baking tray with baking paper.
  2. Chop the capsicum, zucchini, and red onion into bite-sized pieces. Toss them with 2 tbsp olive oil, salt, and pepper. Spread evenly on the baking tray and roast for 25 minutes, turning halfway.
  3. While the vegetables are roasting, cook the brown rice according to packet instructions. Stir in half of the chopped parsley during the last 2 minutes of cooking, then remove from heat and set aside.
  4. To make the whipped feta, blend the feta cheese, Greek yoghurt, juice of half the lemon, and 1 tbsp olive oil until creamy. Taste and adjust seasoning as needed.
  5. In a large frypan, heat the remaining olive oil over medium heat. Add the diced chicken breast and cook for 6-8 minutes until golden and cooked through, seasoning with salt and pepper.
  6. Finely chop the garlic and sautΓ© it in the pan for 1 minute after the chicken has cooked. Stir in the remaining parsley and spinach, allowing the spinach to wilt slightly.
  7. Assemble the bowls: layer the herby rice as a base, top with roasted vegetables and cooked chicken, then drizzle with the whipped feta. Finish with a squeeze of the remaining lemon juice and an extra drizzle of olive oil if desired.
  8. Serve immediately and enjoy!
