Ingredients

  • 500 g RSPCA Approved Chicken Mince
  • 1 each lettuce
  • 2 tbsp honey
  • 3 tbsp soy sauce
  • 2 tsp ginger
  • 2 clove garlic
  • 1 each carrot
  • 1 each cucumber
  • 1.5 tbsp rice vinegar
  • 3 each spring onion
  • 2 tsp sesame seeds
  • 2 cups cooked jasmine rice

Instructions

  1. Preheat your oven to 200Β°C (180Β°C fan-forced) and line a baking tray with baking paper.
  2. In a mixing bowl, combine chicken mince, 1 tablespoon soy sauce, 1 teaspoon grated ginger, 1 minced garlic clove, and 1 finely chopped spring onion. Mix well to form a uniform mixture.
  3. Shape the chicken mixture into small meatballs (about 16 total) and place them on the baking tray.
  4. Bake the meatballs for 15 minutes, turning them halfway through for even cooking.
  5. While the meatballs bake, prepare the sauce by mixing 2 tablespoons of soy sauce, 2 tablespoons of honey, 1 teaspoon of grated ginger, and the remaining minced garlic clove in a small saucepan. Heat over low heat until slightly thickened (around 3-5 minutes).
  6. Quick-pickle the vegetables: Thinly slice the carrot and cucumber, and toss them with rice vinegar in a small bowl. Set aside.
  7. Once the meatballs are cooked, brush them with the sticky honey soy glaze, ensuring they're well coated.
  8. Separate lettuce leaves into individual cups and arrange them on a serving platter.
  9. To assemble, place 2-3 meatballs in each lettuce cup, top with pickled vegetables, and garnish with sliced spring onions and a sprinkle of sesame seeds.
  10. Serve each lettuce cup with a small side of cooked jasmine rice for a complete meal.
