Ingredients
- 500 g Pork Sirloin Steak
- 2 cups Jasmine rice
- 1 each Carrot
- 200 g broccoli
- 1 each Red capsicum
- 1 each Brown onion
- 4 tbsp Soy sauce
- 20 g Ginger
- 2 cloves Garlic
- 1 each Lime
- 0.5 bunch Coriander
- 2 tbsp Brown sugar
- 1.5 tbsp Sunflower oil
Instructions
- Cook jasmine rice according to package instructions. Once cooked, set aside and keep warm.
- Thinly slice pork sirloin steak into strips and season lightly with salt and pepper.
- Heat half the sunflower oil in a large frying pan or wok over medium-high heat.
- Add pork strips and stir-fry for 3-4 minutes until just cooked through. Remove from pan and set aside.
- Add the remaining sunflower oil to the pan.
- Stir-fry chopped brown onion, grated ginger, and minced garlic for 1-2 minutes until aromatic.
- Add thinly sliced carrot, broccolini florets, and red capsicum slices to the pan.
- Stir-fry vegetables for 3-4 minutes until tender-crisp.
- In a small bowl, mix soy sauce, brown sugar, and the juice of half a lime to create the sticky sauce.
- Return pork to the pan and pour over the sticky sauce. Toss to coat everything evenly and cook for 2 more minutes.
- Serve stir-fried pork and vegetables over a bed of steamed jasmine rice.
- Garnish with chopped coriander leaves and a wedge of lime on the side.
