Ingredients
- 800 g Beef Slow Cook Short Ribs
- 1.0 kg potatoes
- 300 g frozen peas
- 2 each onion
- 3 cloves garlic
- 500 ml beef stock
- 2 tbsp plain flour
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 100 g butter
- 100 ml milk
- 2 tsp salt
- 1 tsp pepper
Instructions
- Preheat your oven to 160Β°C.
- Pat the beef short ribs dry with paper towels and season generously with salt and pepper.
- In a large oven-safe pot, heat a splash of oil over medium-high heat. Sear the ribs on all sides until browned, about 8 minutes. Remove and set aside.
- In the same pot, reduce the heat to medium and add the diced onion and minced garlic. SautΓ© until softened.
- Stir in the plain flour and cook for 1-2 minutes.
- Slowly whisk in the beef stock, Worcestershire sauce, and tomato paste. Bring to a simmer and season with salt and pepper.
- Return the seared ribs to the pot, ensuring they're mostly submerged in the liquid. Cover the pot with a lid or foil and transfer to the oven.
- Cook for 3.5-4 hours, or until the ribs are tender and the meat falls off the bone.
- About 30 minutes before the ribs are done, peel and chop the potatoes into even chunks. Boil them in salted water until soft, about 20 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth. Season with salt and pepper to taste.
- Cook the frozen peas in boiling water for 4-5 minutes, then drain and toss with a little butter.
- Serve the slow-cooked beef ribs with the rich gravy over the mashed potatoes and peas. Enjoy!
