Ingredients

  • 500 g RSPCA Approved Chicken Breast Diced
  • 1 each Kantong Meal Base Pouch Satay Chicken
  • 1.5 cups rice
  • 2 tbsp canola oil
  • 200 ml coconut milk
  • 50 g peanuts

Instructions

  1. Cook 1.5 cups of rice according to the package instructions and set aside.
  2. Heat 2 tablespoons of canola oil in a large frying pan or wok over medium-high heat.
  3. Add 500g of diced chicken breast to the pan and cook until browned and fully cooked through, approximately 5-7 minutes.
  4. Reduce the heat to medium and stir in the Kantong Meal Base Pouch Satay Chicken and 200ml of coconut milk.
  5. Simmer the mixture for 5-10 minutes, stirring occasionally, until the sauce is heated and slightly thickened.
  6. Serve the chicken and satay sauce over the cooked rice.
  7. Garnish with 50g of crushed peanuts for added crunch and flavour.
