Ingredients

  • 450 g Lamb Leg Diced
  • 500 g potatoes
  • 300 g carrots
  • 1 each onion
  • 2 stalks celery
  • 1 L beef stock
  • 1 tsp thyme
  • 3 tbsp parsley
  • 2 leaves bay leaf
  • 400 g tinned tomatoes
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 1 loaf crusty bread

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the diced lamb leg in batches until browned all over. Remove from the pot and set aside.
  2. In the same pot, add diced onion, sliced celery, and minced garlic. SautΓ© until the onion is translucent.
  3. Add diced potatoes, sliced carrots, tinned tomatoes, beef stock, bay leaves, and thyme to the pot. Stir well.
  4. Return the lamb to the pot, ensuring it is submerged in the broth. Bring the mixture to a boil.
  5. Reduce heat to low, cover the pot with a lid, and let it simmer for 1.5 to 2 hours, stirring occasionally, until the lamb is tender and the vegetables are cooked.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve hot, garnished with chopped parsley and with crusty bread on the side for dipping.
