Ingredients
- 450 g Lamb Leg Diced
- 500 g potatoes
- 300 g carrots
- 1 each onion
- 2 stalks celery
- 1 L beef stock
- 1 tsp thyme
- 3 tbsp parsley
- 2 leaves bay leaf
- 400 g tinned tomatoes
- 3 cloves garlic
- 2 tbsp olive oil
- 1 loaf crusty bread
Instructions
- Heat olive oil in a large pot over medium heat. Sear the diced lamb leg in batches until browned all over. Remove from the pot and set aside.
- In the same pot, add diced onion, sliced celery, and minced garlic. SautΓ© until the onion is translucent.
- Add diced potatoes, sliced carrots, tinned tomatoes, beef stock, bay leaves, and thyme to the pot. Stir well.
- Return the lamb to the pot, ensuring it is submerged in the broth. Bring the mixture to a boil.
- Reduce heat to low, cover the pot with a lid, and let it simmer for 1.5 to 2 hours, stirring occasionally, until the lamb is tender and the vegetables are cooked.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with chopped parsley and with crusty bread on the side for dipping.
