Lamb and Sweet Potato Pie with Minted Peas

Ingredients

  • 450 g Lamb Leg Diced
  • 800 g sweet potato
  • 100 g cheddar cheese
  • 1 each onion
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 120 g baby spinach
  • 10 g fresh mint
  • 2 tbsp plain flour
  • 1 each egg
  • 2 tbsp olive oil
  • 150 g peas
  • 20 g butter

Instructions

  1. Preheat oven to 180Β°C.
  2. Peel and grate the sweet potatoes. Mix with a beaten egg, plain flour, smoked paprika, and half the grated cheddar cheese. Season with salt and pepper.
  3. In a large pan, heat olive oil over medium heat. Add diced lamb, season with salt and cook until browned. Remove and set aside.
  4. In the same pan, add more oil if necessary and sautΓ© diced onion and minced garlic until fragrant.
  5. Add tomato paste, smoked paprika, and a splash of water to create a spiced lamb mixture. Return lamb to the pan and stir in baby spinach until wilted.
  6. Spoon the lamb mixture into a baking dish, spreading it evenly.
  7. Cover the lamb mix with the sweet potato rosti mixture. Sprinkle the remaining grated cheddar cheese on top.
  8. Bake for 40-45 minutes or until the top is golden brown.
  9. Meanwhile, boil peas until tender. Drain and toss with butter and freshly chopped mint.
  10. Serve the pie hot with minted peas on the side.
