Ingredients
- 450 g Lamb Leg Diced
- 800 g sweet potato
- 100 g cheddar cheese
- 1 each onion
- 3 cloves garlic
- 2 tbsp tomato paste
- 1 tsp smoked paprika
- 120 g baby spinach
- 10 g fresh mint
- 2 tbsp plain flour
- 1 each egg
- 2 tbsp olive oil
- 150 g peas
- 20 g butter
Instructions
- Preheat oven to 180Β°C.
- Peel and grate the sweet potatoes. Mix with a beaten egg, plain flour, smoked paprika, and half the grated cheddar cheese. Season with salt and pepper.
- In a large pan, heat olive oil over medium heat. Add diced lamb, season with salt and cook until browned. Remove and set aside.
- In the same pan, add more oil if necessary and sautΓ© diced onion and minced garlic until fragrant.
- Add tomato paste, smoked paprika, and a splash of water to create a spiced lamb mixture. Return lamb to the pan and stir in baby spinach until wilted.
- Spoon the lamb mixture into a baking dish, spreading it evenly.
- Cover the lamb mix with the sweet potato rosti mixture. Sprinkle the remaining grated cheddar cheese on top.
- Bake for 40-45 minutes or until the top is golden brown.
- Meanwhile, boil peas until tender. Drain and toss with butter and freshly chopped mint.
- Serve the pie hot with minted peas on the side.
