Ingredients

  • 500 g RSPCA Approved Chicken Mince
  • 1.2 kg potatoes
  • 2 each carrot
  • 2 stalks celery
  • 1 each onion
  • 1 cup frozen peas
  • 1.5 cups chicken stock
  • 2 tbsp tomato paste
  • 50 g butter
  • 0.75 cup milk
  • 2 tbsp olive oil
  • 2 tbsp plain flour
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Peel and chop the potatoes into even chunks. Place them in a saucepan, cover with water, and bring to a boil. Cook for 15-20 minutes or until tender.
  3. While potatoes are cooking, heat the olive oil in a large pan over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5 minutes.
  4. Add the chicken mince to the pan, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the plain flour and cook for another minute. Add the chicken stock, tomato paste, frozen peas, salt, and pepper, stirring well. Simmer until the mixture thickens, about 5 minutes.
  6. Drain the cooked potatoes and return them to the pot. Add the butter and milk, mashing until smooth. Season with a pinch of salt if desired.
  7. Transfer the chicken mixture to a baking dish, spreading it out evenly. Spoon the mashed potatoes over the top, smoothing it out with a fork to create a ridged pattern.
  8. Bake the cottage pie in the preheated oven for 20-25 minutes or until the top is golden and bubbling.
