Ingredients
- 500 g RSPCA Approved Chicken Mince
- 1.2 kg potatoes
- 2 each carrot
- 2 stalks celery
- 1 each onion
- 1 cup frozen peas
- 1.5 cups chicken stock
- 2 tbsp tomato paste
- 50 g butter
- 0.75 cup milk
- 2 tbsp olive oil
- 2 tbsp plain flour
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Preheat the oven to 200°C (180°C fan-forced).
- Peel and chop the potatoes into even chunks. Place them in a saucepan, cover with water, and bring to a boil. Cook for 15-20 minutes or until tender.
- While potatoes are cooking, heat the olive oil in a large pan over medium heat. Add the diced onion, carrot, and celery, sautéing until softened, about 5 minutes.
- Add the chicken mince to the pan, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in the plain flour and cook for another minute. Add the chicken stock, tomato paste, frozen peas, salt, and pepper, stirring well. Simmer until the mixture thickens, about 5 minutes.
- Drain the cooked potatoes and return them to the pot. Add the butter and milk, mashing until smooth. Season with a pinch of salt if desired.
- Transfer the chicken mixture to a baking dish, spreading it out evenly. Spoon the mashed potatoes over the top, smoothing it out with a fork to create a ridged pattern.
- Bake the cottage pie in the preheated oven for 20-25 minutes or until the top is golden and bubbling.
- Let the pie cool slightly before serving. Enjoy your hearty chicken mince and vegetable cottage pie!
