Ingredients
- 950 g Beef Chuck Casserole Steak
- 2 tbsp paprika
- 2 each capsicum
- 1 each brown onion
- 3 cloves garlic
- 400 g tinned tomatoes
- 2 cups beef stock
- 250 g plain flour
- 1 each egg
- 50 g butter
- 200 g sour cream
- 15 g fresh parsley
Instructions
- Cut the Beef Chuck Casserole Steak into bite-sized cubes.
- Heat 1 tbsp of butter in a large pot over medium-high heat. Sear the beef cubes on all sides until browned, working in batches to avoid overcrowding the pan.
- Remove the beef and set aside. In the same pot, add chopped brown onion, minced garlic, and diced capsicum. SautΓ© until softened.
- Stir in the paprika and cook for another minute.
- Pour in the tinned tomatoes and beef stock. Return the beef to the pot, ensuring it's submerged in the sauce.
- Bring the mixture to a simmer, cover with a lid, and cook on low heat for 1.5Γ’β¬β2 hours or until the beef is tender.
- In a bowl, mix plain flour, an egg, 25g melted butter, a pinch of salt, and enough water to form a soft dough. Divide the dough into small dumplings.
- Drop the dumplings into simmering salted water and cook for 10 minutes until they float to the top and are cooked through.
- Drain the dumplings and toss them with the remaining butter while warm.
- Serve the goulash with buttered dumplings, a dollop of sour cream, and a sprinkle of chopped fresh parsley.
