Hearty Beef Chuck Goulash with Buttered Dumplings

Ingredients

  • 950 g Beef Chuck Casserole Steak
  • 2 tbsp paprika
  • 2 each capsicum
  • 1 each brown onion
  • 3 cloves garlic
  • 400 g tinned tomatoes
  • 2 cups beef stock
  • 250 g plain flour
  • 1 each egg
  • 50 g butter
  • 200 g sour cream
  • 15 g fresh parsley

Instructions

  1. Cut the Beef Chuck Casserole Steak into bite-sized cubes.
  2. Heat 1 tbsp of butter in a large pot over medium-high heat. Sear the beef cubes on all sides until browned, working in batches to avoid overcrowding the pan.
  3. Remove the beef and set aside. In the same pot, add chopped brown onion, minced garlic, and diced capsicum. SautΓ© until softened.
  4. Stir in the paprika and cook for another minute.
  5. Pour in the tinned tomatoes and beef stock. Return the beef to the pot, ensuring it's submerged in the sauce.
  6. Bring the mixture to a simmer, cover with a lid, and cook on low heat for 1.5Γ’β‚¬β€œ2 hours or until the beef is tender.
  7. In a bowl, mix plain flour, an egg, 25g melted butter, a pinch of salt, and enough water to form a soft dough. Divide the dough into small dumplings.
  8. Drop the dumplings into simmering salted water and cook for 10 minutes until they float to the top and are cooked through.
  9. Drain the dumplings and toss them with the remaining butter while warm.
  10. Serve the goulash with buttered dumplings, a dollop of sour cream, and a sprinkle of chopped fresh parsley.
