Ingredients
- 500 g RSPCA Approved Chicken Breast Mince
- 2 cups panko breadcrumbs
- 2 each eggs
- 0.5 cups plain flour
- 200 g coleslaw
- 0.5 cups mayonnaise
- 2 tbsp sriracha
- 4 each burger buns
- 400 g frozen chips
- 0.25 cups canola oil
- 0.5 tsp salt
- 0.25 tsp pepper
- 50 g lettuce
Instructions
- Preheat oven to 200°C (180°C fan-forced). Spread frozen chips on a baking tray and cook for 25–30 minutes or until golden and crispy, flipping halfway through.
- Mix chicken mince with salt and pepper in a bowl. Divide mixture into 4 equal portions and shape into flat patties.
- Set up a breading station: one plate with flour, one bowl with beaten eggs, and one plate with panko breadcrumbs.
- Coat each chicken patty in flour, dip into beaten egg, and cover in panko breadcrumbs, pressing lightly to ensure even coating.
- Heat canola oil in a large frying pan over medium heat. Cook patties for 4–5 minutes on each side until golden and fully cooked (internal temperature reaches 75°C).
- In a small bowl, mix mayonnaise and sriracha to make spicy mayo. Adjust sriracha to taste.
- Lightly toast burger buns in a dry pan or in the oven for 2–3 minutes.
- Assemble burgers: spread spicy mayo on the bun bases, place a piece of lettuce, followed by the katsu patty, slaw mix, and top with the bun lids.
- Serve immediately with a side of crispy oven-baked chips.
