Chicken and Ricotta Cannelloni with Garden Salad

Tender tubes of cannelloni stuffed with a savoury mix of chicken mince and ricotta, baked in a tomato sauce, and served with a crisp garden salad.

Ingredients

  • 500 g RSPCA Approved Chicken Mince
  • 16 each cannelloni tubes
  • 250 g ricotta cheese
  • 100 g baby spinach
  • 50 g parmesan cheese
  • 400 g tinned tomatoes
  • 1 each onion
  • 2 cloves garlic
  • 0.5 bunch basil
  • 2 tbsp olive oil
  • 180 g garden salad

Instructions

  1. Preheat oven to 180Β°C.
  2. Heat olive oil in a pan over medium heat. SautΓ© chopped onion and minced garlic until softened.
  3. Add chicken mince to the pan and cook until browned. Stir occasionally.
  4. Chop the spinach finely and add to the pan. Cook until wilted, then remove from heat and let mixture cool slightly.
  5. Transfer the chicken mixture to a bowl. Stir in ricotta cheese and half the parmesan cheese. Season with salt and pepper.
  6. Stuff the cannelloni tubes with the chicken and ricotta filling using a small spoon or piping bag.
  7. Pour half the tinned tomatoes into a baking dish and spread evenly.
  8. Arrange the stuffed cannelloni tubes in a single layer over the tomatoes.
  9. Pour the remaining tinned tomatoes over the cannelloni. Sprinkle with the remaining parmesan cheese.
  10. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
  11. Meanwhile, prepare the garden salad with your choice of greens and vegetables, and dress lightly.
  12. Garnish the cannelloni with fresh basil and serve hot with the garden salad.
