Ingredients

  • 500 g Chicken Breast Diced
  • 0.5 cup peanut butter
  • 0.5 cup coconut milk
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 each cucumber
  • 2 each carrot
  • 4 tbsp rice vinegar
  • 1 each red onion
  • 1.25 cup jasmine rice
  • 2 cloves garlic
  • 1 tbsp ginger
  • 8 sticks skewers

Instructions

  1. Soak the skewers in water for at least 10 minutes to prevent burning.
  2. In a bowl, mix peanut butter, coconut milk, soy sauce, brown sugar, minced garlic, and grated ginger to form the satay marinade.
  3. Add diced chicken breast to the marinade, ensuring all pieces are coated. Set aside to marinate for 15 minutes.
  4. While marinating, prepare the quick pickled vegetables: thinly slice cucumber, carrot, and red onion; mix rice vinegar, 2 tablespoons of sugar (optional), and a pinch of salt in a bowl. Toss vegetables in the mixture and set aside.
  5. Cook jasmine rice according to package instructions and keep warm.
  6. Thread marinated chicken onto the skewers.
  7. Heat a grill or grill pan over medium heat. Grill the skewers for about 3-4 minutes per side, basting occasionally with remaining marinade, until chicken is cooked through and charred in spots.
  8. Serve grilled chicken satay skewers with pickled vegetables on the side and jasmine rice. Drizzle extra satay sauce over the skewers for added flavor.
