Ingredients

  • 500 g RSPCA Approved Chicken Mince
  • 2 sheets puff pastry
  • 2 each carrot
  • 2 stalks celery
  • 1 each potato
  • 1 each onion
  • 1 cup frozen peas
  • 2 cups chicken stock
  • 30 g butter
  • 2 tablespoons plain flour
  • 0.5 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Preheat the oven to 200Β°C.
  2. Heat olive oil in a large saucepan over medium heat.
  3. Add diced onion, carrot, celery, and potato. Saute for 5 minutes until vegetables are softened.
  4. Add chicken mince and cook, breaking up lumps with a spoon, until browned.
  5. Add butter to the pan and stir until melted. Sprinkle flour over the mixture and cook for 1 minute.
  6. Gradually stir in chicken stock and milk, ensuring no lumps form.
  7. Bring to a simmer and cook for 5 minutes, stirring often, until the mixture thickens.
  8. Add frozen peas and thyme. Season with salt and black pepper. Remove from heat and let cool slightly.
  9. Spoon the chicken and vegetable mixture into a baking dish.
  10. Cut puff pastry sheets to fit over the pie. Place the pastry on top, trimming the edges if necessary and pressing to seal.
  11. Brush the pastry with a little milk for a golden finish.
  12. Bake in the preheated oven for 25 minutes or until the pastry is puffed and golden brown.
  13. Remove from oven and let rest for 5 minutes before serving.
