Ingredients

  • 500 g RSPCA Approved Chicken Breast Diced
  • 375 ml Butter Chicken Simmer Sauce Mild
  • 200 g Basmati rice
  • 2 cloves Garlic
  • 100 ml Yoghurt
  • 15 g Coriander
  • 1 tbsp Olive oil

Instructions

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Add the diced chicken breast to the pan and cook until golden on the outside, about 5 minutes.
  4. Pour in the butter chicken simmer sauce and reduce heat to medium. Simmer for 15 minutes, stirring occasionally, until chicken is fully cooked.
  5. While the chicken cooks, rinse the basmati rice under cold water and cook as per package instructions.
  6. Once cooked, remove the chicken from heat and stir in yoghurt for added creaminess.
  7. Serve the butter chicken over a bed of fluffy basmati rice, garnished with fresh coriander.
