Ingredients
- 1.5 kg Free Range Whole Chicken
- 400 g potatoes
- 700 g pumpkin
- 2 cup frozen peas
- 1 each onion
- 2 each carrot
- 1 stalk celery
- 2 tbsp flour
- 1.5 cup chicken stock
- 2 tbsp olive oil
- 1 tbsp parsley
Instructions
- Preheat your oven to 200Β°C.
- Rub the whole chicken with olive oil, seasoning generously with salt and pepper. Place it in a roasting tray.
- Peel and cut the potatoes and pumpkin into large chunks. Toss them in olive oil and sprinkle with salt.
- Arrange the potatoes and pumpkin around the chicken in the tray.
- Roast the chicken and vegetables in the oven for 1.5 hours, basting occasionally, until the chicken is golden and cooked through. Remove when the internal temperature reaches 75Β°C.
- While the chicken is roasting, prepare the other vegetables. Peel and chop the onions, carrots, and celery.
- Heat a bit of olive oil in a pan and sautΓ© the onions, carrots, and celery until softened. Set aside.
- Boil the frozen peas in salted water for 5 minutes before serving. Drain.
- Once the chicken is done, remove it from the tray. Place it on a serving dish, covering it loosely with foil to rest.
- Spoon out the excess fat from the roasting tray, leaving about 2 tablespoons. Place the tray on the stove over medium heat.
- Stir in the flour, cooking for about a minute until it forms a paste.
- Gradually add chicken stock, stirring constantly, to scrape up the brown bits in the tray and make the gravy. Simmer for 5β10 minutes until slightly thickened.
- Carve the chicken and serve it with the roasted vegetables, peas, and gravy. Sprinkle parsley over the top as a garnish.
