Braised Chicken Drumsticks with Garlic Mash

Ingredients

  • 1.2 kg RSPCA Approved Chicken Drumsticks
  • 2 400g cans diced tomatoes
  • 1 each brown onion
  • 6 cloves garlic
  • 1 tbsp mixed Italian herbs
  • 100 g kalamata olives
  • 800 g potatoes
  • 0.5 cup milk
  • 50 g butter
  • 10 g parsley

Instructions

  1. Preheat a large deep skillet or heavy-based pan over medium heat.
  2. Season the chicken drumsticks with salt and pepper, then sear them in the pan until golden brown on all sides. Remove and set aside.
  3. In the same pan, sauté the chopped brown onion and minced garlic until fragrant and softened.
  4. Add in the mixed Italian herbs and stir to release their aroma.
  5. Pour in the diced tomatoes and bring the mixture to a simmer.
  6. Return the chicken drumsticks to the pan and spoon the sauce over them. Cover the pan and let it simmer on low heat for 45 minutes, turning the drumsticks occasionally.
  7. 10 minutes before the chicken is done, add the kalamata olives to the sauce.
  8. Meanwhile, prepare the garlic mashed potatoes: Boil the potatoes in salted water until tender, then drain.
  9. Mash the cooked potatoes with butter, warm milk, and a pinch of salt until creamy. Stir in minced garlic to taste.
  10. Serve the braised chicken drumsticks over a bed of garlic mash, garnished with fresh parsley.
