Ingredients
- 500 g RSPCA Approved Chicken Breast Diced
- 300 ml cream
- 250 ml chicken stock
- 8 cloves garlic
- 0.25 bunch parsley
- 800 g potatoes
- 75 g butter
- 300 g green beans
- 2 tbsp olive oil
Instructions
- Peel and dice the potatoes. Boil them in a pot of salted water for 15β20 minutes, until tender.
- While the potatoes are cooking, heat 1 tbsp olive oil in a large frying pan over medium-high heat.
- Add the diced chicken to the pan, season with salt and pepper, and cook until browned on the outside. Remove from pan and set aside.
- In the same pan, reduce the heat and add the remaining olive oil. SautΓ© the minced garlic for 1β2 minutes until fragrant.
- Pour in the chicken stock and cream, stirring to combine. Let it simmer for around 5 minutes until slightly thickened.
- Return the chicken to the pan, tossing to coat in the creamy sauce. Simmer on low heat for another 10 minutes until the chicken is cooked through.
- Meanwhile, steam or blanch the green beans in boiling water for 3β4 minutes until vibrant and tender-crisp.
- Drain the cooked potatoes and mash them with butter, a pinch of salt, and a splash of cream (optional) until smooth and creamy.
- Serve the creamy garlic chicken over the mashed potatoes and sprinkle with chopped parsley. Add the green beans on the side. Enjoy!
