Creamy Garlic Chicken with Potato Mash and Green Beans

Ingredients

  • 500 g RSPCA Approved Chicken Breast Diced
  • 300 ml cream
  • 250 ml chicken stock
  • 8 cloves garlic
  • 0.25 bunch parsley
  • 800 g potatoes
  • 75 g butter
  • 300 g green beans
  • 2 tbsp olive oil

Instructions

  1. Peel and dice the potatoes. Boil them in a pot of salted water for 15–20 minutes, until tender.
  2. While the potatoes are cooking, heat 1 tbsp olive oil in a large frying pan over medium-high heat.
  3. Add the diced chicken to the pan, season with salt and pepper, and cook until browned on the outside. Remove from pan and set aside.
  4. In the same pan, reduce the heat and add the remaining olive oil. SautΓ© the minced garlic for 1–2 minutes until fragrant.
  5. Pour in the chicken stock and cream, stirring to combine. Let it simmer for around 5 minutes until slightly thickened.
  6. Return the chicken to the pan, tossing to coat in the creamy sauce. Simmer on low heat for another 10 minutes until the chicken is cooked through.
  7. Meanwhile, steam or blanch the green beans in boiling water for 3–4 minutes until vibrant and tender-crisp.
  8. Drain the cooked potatoes and mash them with butter, a pinch of salt, and a splash of cream (optional) until smooth and creamy.
  9. Serve the creamy garlic chicken over the mashed potatoes and sprinkle with chopped parsley. Add the green beans on the side. Enjoy!
