Ingredients
- 500 g No Added Hormone Beef Rump Steak
- 3 each corn
- 1 each capsicum
- 420 g black beans
- 1 each red onion
- 1 each lime
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 2 cloves garlic
- 4 each tortilla wraps
- 0.5 bunch parsley or coriander (optional)
Instructions
- Cut the beef rump steak into strips suitable for skewers. Set aside.
- In a bowl, mix olive oil, smoked paprika, minced garlic, and juice of one lime. Add salt and pepper to taste.
- Marinate the beef strips in the mixture for 20 minutes while you prepare the other ingredients.
- Peel back the husk of the corn cobs and brush them lightly with olive oil.
- Char the corn on a BBQ grill or stovetop grill pan for approximately 10 minutes until slightly blackened, then cut kernels off the cobs.
- Dice the capsicum and red onion into small pieces. If using a fresh bunch of parsley or coriander, finely chop it.
- In a large bowl, combine the charred corn kernels, diced capsicum, black beans, diced red onion, juice of the remaining lime, and chopped herbs. Toss together and season with salt and pepper.
- Skewer the marinated beef strips onto metal or soaked wooden skewers.
- Grill the beef skewers on high heat for 2β3 minutes on each side until cooked to your preferred level of doneness.
- Warm tortilla wraps on a grill or in a microwave for about 30 seconds.
- Serve the beef skewers alongside the smoky BBQ corn salad, offering tortilla wraps as an optional accompaniment for wrapping the beef and salad like a street-food-style taco.
