Ingredients
- 500 g Beef Rump Steak
- 200 g shortcrust pastry
- 400 g potatoes
- 200 g carrots
- 1 each brown onion
- 150 g frozen peas
- 250 ml beef stock
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 tbsp plain flour
- 2 tbsp olive oil
- 1 each egg
Instructions
- Preheat the oven to 180Β°C.
- Cut the beef rump steak into small bite-sized cubes. Season with salt and pepper.
- Heat olive oil in a large saucepan over medium-high heat. Brown the beef in batches, then set aside.
- In the same saucepan, add diced onion, and cook until softened.
- Add diced carrots and cook for 2β3 minutes before stirring in plain flour. Cook until the flour is lightly golden.
- Pour in beef stock, stir in tomato paste and Worcestershire sauce. Simmer and stir until the mixture thickens.
- Return the browned beef to the saucepan, add frozen peas, and stir. Simmer on low heat for one hour or until beef is tender.
- While the beef filling is cooking, peel and dice potatoes, then cook them in boiling water until soft. Drain and set aside.
- Roll out shortcrust pastry to fit your pie dish. Line the dish with the pastry, ensuring the edges are covered.
- Spoon the beef and veggie filling into the pastry-lined dish. Create a neat layer.
- Cover the filling with another sheet of pastry, sealing edges with a fork. Trim excess pastry.
- Beat the egg and brush it over the pastry top for a golden finish.
- Poke a few small holes in the pastry top to release steam.
- Bake in the oven for about 40 minutes or until golden brown.
- Allow to cool slightly before serving. Enjoy!
