Spanish Pork Loin Pinchos with Patatas Bravas and Aioli

Ingredients

  • 500 g Pork loin steaks thin cut
  • 2 tsp smoked paprika
  • 50 ml olive oil
  • 6 cloves garlic
  • 1 each lemon
  • 600 g potatoes
  • 2 tbsp tomato paste
  • 1 each onion
  • 10 g parsley
  • 1 each eggs
  • 300 ml vegetable oil
  • 1 tsp salt
  • 1 tsp pepper
  • 0.5 tsp cayenne pepper

Instructions

  1. In a bowl, combine 2 tsp smoked paprika, 3 minced garlic cloves, juice of 1 lemon, 2 tbsp olive oil, salt, and pepper. Add pork loin steaks and marinate for at least 20 minutes.
  2. Thread marinated pork loin steaks onto skewers. Set aside.
  3. Dice potatoes into 2cm cubes. Boil in salted water for 5 minutes, then drain and pat dry.
  4. Heat vegetable oil in a large frying pan. Fry potatoes until golden and crispy. Remove and place on paper towels to drain excess oil.
  5. In a small saucepan, heat 1 tbsp olive oil and sautΓ© 1 chopped onion and 3 minced garlic cloves until soft. Add 2 tbsp tomato paste, 1 tsp smoked paprika, 0.5 tsp cayenne pepper, salt, and pepper. Cook for 5 minutes until thickened.
  6. Toss crispy potatoes in the tomato sauce mixture to make patatas bravas.
  7. For the aioli, whisk 1 egg yolk with a pinch of salt. Slowly drizzle in 200ml vegetable oil while whisking continuously until emulsified. Mix in 1 minced garlic clove and 1 tsp lemon juice.
  8. Preheat a grill or grill pan over high heat. Grill pork pinchos for 3 minutes on each side until cooked through.
  9. Serve pork pinchos with patatas bravas and a side of aioli. Garnish with chopped parsley.
