Ingredients
- 500 g Pork loin steaks thin cut
- 2 tsp smoked paprika
- 50 ml olive oil
- 6 cloves garlic
- 1 each lemon
- 600 g potatoes
- 2 tbsp tomato paste
- 1 each onion
- 10 g parsley
- 1 each eggs
- 300 ml vegetable oil
- 1 tsp salt
- 1 tsp pepper
- 0.5 tsp cayenne pepper
Instructions
- In a bowl, combine 2 tsp smoked paprika, 3 minced garlic cloves, juice of 1 lemon, 2 tbsp olive oil, salt, and pepper. Add pork loin steaks and marinate for at least 20 minutes.
- Thread marinated pork loin steaks onto skewers. Set aside.
- Dice potatoes into 2cm cubes. Boil in salted water for 5 minutes, then drain and pat dry.
- Heat vegetable oil in a large frying pan. Fry potatoes until golden and crispy. Remove and place on paper towels to drain excess oil.
- In a small saucepan, heat 1 tbsp olive oil and sautΓ© 1 chopped onion and 3 minced garlic cloves until soft. Add 2 tbsp tomato paste, 1 tsp smoked paprika, 0.5 tsp cayenne pepper, salt, and pepper. Cook for 5 minutes until thickened.
- Toss crispy potatoes in the tomato sauce mixture to make patatas bravas.
- For the aioli, whisk 1 egg yolk with a pinch of salt. Slowly drizzle in 200ml vegetable oil while whisking continuously until emulsified. Mix in 1 minced garlic clove and 1 tsp lemon juice.
- Preheat a grill or grill pan over high heat. Grill pork pinchos for 3 minutes on each side until cooked through.
- Serve pork pinchos with patatas bravas and a side of aioli. Garnish with chopped parsley.
