Ingredients

  • 8 drumsticks RSPCA Approved Chicken Drumsticks
  • 4 medium potatoes
  • 3 medium carrots
  • 1 each brown onion
  • 3 tablespoons honey
  • 2.5 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon ginger
  • 2 tablespoons parsley

Instructions

  1. Preheat your oven to 200°C and line two baking trays with baking paper.
  2. In a small bowl, combine honey, soy sauce, grated garlic, and grated ginger to make the glaze.
  3. Place the chicken drumsticks in a large bowl, add half the glaze, and toss to coat evenly. Reserve the remaining glaze for basting.
  4. Cut the potatoes, carrots, and onion into evenly sized chunks and place them in a large bowl.
  5. Drizzle the olive oil over the vegetables and season with salt and pepper. Toss to coat.
  6. Spread the vegetables evenly on one of the prepared trays. Place the glazed drumsticks on the other tray.
  7. Bake the chicken and vegetables in the oven for 45-50 minutes, turning the drumsticks halfway through, and basting with the reserved glaze.
  8. Once cooked, remove from the oven and sprinkle the chopped parsley over the vegetables.
  9. Serve the glazed drumsticks with the roasted veggies for a hearty meal.
