Ingredients

  • 500 g Pork & Beef 3 Star Regular Mince Bolognese
  • 4 each flatbread
  • 1 head lettuce
  • 2 each tomato
  • 1 each red onion
  • 3 cloves garlic
  • 300 g greek yoghurt
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 bunch parsley
  • 1 each lemon
  • 30 ml olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat a grill or grill pan on medium-high heat.
  2. In a large mixing bowl, combine the mince, minced garlic (2 cloves), cumin, paprika, chopped parsley (half the bunch), salt, and pepper.
  3. Divide the mixture into 8 equal portions and shape into small sausage-shaped koftas.
  4. Brush the koftas lightly with olive oil and grill for 8-10 minutes, turning occasionally, until cooked through.
  5. While the koftas are cooking, prepare the yoghurt sauce by mixing greek yoghurt, the juice of half a lemon, minced garlic (1 clove), and a pinch of salt.
  6. Slice the lettuce, tomato, and red onion thinly.
  7. Warm the flatbreads in the oven or on a pan.
  8. To assemble the wraps, place a layer of lettuce, tomato, and onion on each flatbread, add 2 koftas, and drizzle with yoghurt sauce. Sprinkle with remaining chopped parsley and lemon juice.
  9. Wrap tightly and serve immediately.
