Ingredients
- 1 each RSPCA Approved Free Range Chicken Whole
- 500 g potatoes
- 200 g carrots
- 200 g parsnips
- 1 each brown onion
- 3 cloves garlic
- 5 g thyme
- 5 g rosemary
- 2 tbsp olive oil
- 250 ml chicken stock
- 2 tbsp plain flour
- 1 tsp salt
- 0.5 tsp pepper
Instructions
- Preheat the oven to 200°C.
- Pat the chicken dry with paper towels and rub it with 1 tablespoon of olive oil, salt, pepper, and half of the thyme and rosemary.
- Place the chicken on a roasting pan or large baking dish.
- Peel and chop the potatoes, carrots, and parsnips into chunks. Slice the brown onion into wedges and slightly crush the garlic cloves.
- In a bowl, toss the vegetables, onion, and garlic with 1 tablespoon of olive oil, the remaining thyme and rosemary, and a pinch of salt and pepper.
- Arrange the vegetables around the chicken in the roasting pan.
- Roast the chicken and vegetables in the oven for 1 hour and 20 minutes, or until the chicken reaches an internal temperature of 74°C.
- Transfer the chicken and vegetables to a serving platter and cover with foil to keep warm.
- To make the gravy, place the roasting pan with the drippings on the stovetop over medium heat. Whisk in 2 tablespoons of flour and cook for 1 minute.
- Gradually add the chicken stock, whisking constantly, and simmer until thickened.
- Strain the gravy into a jug and season to taste.
- Serve the roast chicken and vegetables with the hot gravy drizzled over.
