Ingredients

  • 1 each RSPCA Approved Free Range Chicken Whole
  • 500 g potatoes
  • 200 g carrots
  • 200 g parsnips
  • 1 each brown onion
  • 3 cloves garlic
  • 5 g thyme
  • 5 g rosemary
  • 2 tbsp olive oil
  • 250 ml chicken stock
  • 2 tbsp plain flour
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  1. Preheat the oven to 200°C.
  2. Pat the chicken dry with paper towels and rub it with 1 tablespoon of olive oil, salt, pepper, and half of the thyme and rosemary.
  3. Place the chicken on a roasting pan or large baking dish.
  4. Peel and chop the potatoes, carrots, and parsnips into chunks. Slice the brown onion into wedges and slightly crush the garlic cloves.
  5. In a bowl, toss the vegetables, onion, and garlic with 1 tablespoon of olive oil, the remaining thyme and rosemary, and a pinch of salt and pepper.
  6. Arrange the vegetables around the chicken in the roasting pan.
  7. Roast the chicken and vegetables in the oven for 1 hour and 20 minutes, or until the chicken reaches an internal temperature of 74°C.
  8. Transfer the chicken and vegetables to a serving platter and cover with foil to keep warm.
  9. To make the gravy, place the roasting pan with the drippings on the stovetop over medium heat. Whisk in 2 tablespoons of flour and cook for 1 minute.
  10. Gradually add the chicken stock, whisking constantly, and simmer until thickened.
  11. Strain the gravy into a jug and season to taste.
  12. Serve the roast chicken and vegetables with the hot gravy drizzled over.
