Ingredients

  • 0.45 kg Lamb Leg Diced
  • 1 each onion
  • 2 stalks celery
  • 2 each carrot
  • 1 each parsnip
  • 500 g potato
  • 750 ml beef stock
  • 2 tbsp plain flour
  • 2 tbsp tomato paste
  • 1 tbsp worcestershire sauce
  • 50 g butter
  • 100 ml milk

Instructions

  1. Preheat your oven to 160Β°C.
  2. Heat a large casserole dish or ovenproof pot over medium-high heat. Add a splash of oil.
  3. Season the lamb leg diced pieces with salt and pepper and brown them in batches. Remove and set aside.
  4. Reduce the heat to medium and add diced onion, celery, carrot, and parsnip. Cook until softened.
  5. Stir in the plain flour and cook for 1-2 minutes.
  6. Add the tomato paste, Worcestershire sauce, and beef stock, scraping up any browned bits from the bottom.
  7. Return the browned lamb to the pot and bring to a simmer. Cover with a lid and transfer the pot to the oven.
  8. Cook in the oven for 2 hours, checking occasionally, until the lamb is tender and the sauce is rich and thick.
  9. Half an hour before the casserole is done, boil the potatoes in salted water until tender.
  10. Drain the potatoes and mash with butter and milk until creamy. Season to taste.
  11. To serve, spoon the creamy mashed potato onto plates and top with the hearty lamb casserole.
  12. Garnish with freshly chopped parsley if desired.
