Ingredients
- 0.45 kg Lamb Leg Diced
- 1 each onion
- 2 stalks celery
- 2 each carrot
- 1 each parsnip
- 500 g potato
- 750 ml beef stock
- 2 tbsp plain flour
- 2 tbsp tomato paste
- 1 tbsp worcestershire sauce
- 50 g butter
- 100 ml milk
Instructions
- Preheat your oven to 160Β°C.
- Heat a large casserole dish or ovenproof pot over medium-high heat. Add a splash of oil.
- Season the lamb leg diced pieces with salt and pepper and brown them in batches. Remove and set aside.
- Reduce the heat to medium and add diced onion, celery, carrot, and parsnip. Cook until softened.
- Stir in the plain flour and cook for 1-2 minutes.
- Add the tomato paste, Worcestershire sauce, and beef stock, scraping up any browned bits from the bottom.
- Return the browned lamb to the pot and bring to a simmer. Cover with a lid and transfer the pot to the oven.
- Cook in the oven for 2 hours, checking occasionally, until the lamb is tender and the sauce is rich and thick.
- Half an hour before the casserole is done, boil the potatoes in salted water until tender.
- Drain the potatoes and mash with butter and milk until creamy. Season to taste.
- To serve, spoon the creamy mashed potato onto plates and top with the hearty lamb casserole.
- Garnish with freshly chopped parsley if desired.
