Ingredients

  • 500 g RSPCA Approved Chicken Breast Mince
  • 200 g panko crumbs
  • 2 each free range eggs
  • 100 g plain flour
  • 400 g potatoes
  • 400 g carrots
  • 300 g zucchini
  • 120 g mixed salad greens
  • 200 g tomatoes
  • 160 g cucumber
  • 100 g red onion
  • 100 ml olive oil
  • 1 each lemon
  • 10 g dijon mustard

Instructions

  1. Preheat your oven to 200Β°C and line a baking tray with parchment paper.
  2. Prepare the schnitzel mixture by combining the chicken breast mince with salt and pepper in a bowl. Divide into even patties, then flatten slightly into schnitzel shapes.
  3. Set up a crumbing station: place plain flour in one bowl, beaten eggs in a second bowl, and panko crumbs in a third bowl.
  4. Coat each chicken schnitzel in flour, then dip into the beaten eggs, and finally coat it thoroughly with the panko crumbs. Set aside.
  5. Peel and cut the potatoes and carrots into chunks, and slice the zucchini evenly. Toss the vegetables with olive oil, salt, and pepper, then arrange on the baking tray. Roast in the oven for 20–25 minutes or until golden and tender.
  6. Heat some olive oil in a large frying pan over medium heat. Fry the schnitzels in batches for 3–4 minutes on each side until golden brown and cooked through.
  7. For the salad, combine the mixed salad greens, sliced tomatoes, cucumber, and red onion in a large bowl.
  8. Whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to create the vinaigrette. Drizzle over the salad and toss to coat.
  9. Serve the schnitzels alongside the roasted vegetables and the fresh garden salad.
