Ingredients
- 500 g RSPCA Approved Chicken Mince
- 1.5 cups jasmine rice
- 1 each iceberg lettuce
- 2 each lime
- 3 tbsp fish sauce
- 1 tbsp brown sugar
- 1 each red onion
- 10 g mint
- 10 g coriander
- 1 tsp chilli flakes
- 2 cloves garlic
- 2 stalks spring onion
- 1 tbsp vegetable oil
Instructions
- Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions and set aside.
- Separate the iceberg lettuce leaves, rinse thoroughly, and pat them dry. Set aside on a serving plate.
- Finely chop the red onion, garlic, mint, coriander, and spring onion.
- Heat vegetable oil in a large frying pan over medium heat. Add garlic and red onion. Sauté until fragrant.
- Add chicken mince to the pan and cook, breaking it up with a wooden spoon, until fully cooked and slightly golden.
- In a small bowl, mix fish sauce, lime juice (from 2 limes), brown sugar, and chilli flakes. Stir until the sugar dissolves.
- Pour the sauce mixture into the cooked chicken mince and toss to combine evenly.
- Remove the pan from heat and stir in the chopped mint, coriander, and spring onion.
- Serve the chicken larb warm alongside the cooked jasmine rice and lettuce cups.
- To eat, scoop a portion of the larb and rice into a lettuce leaf, wrap it up, and enjoy!
