A zesty, refreshing Thai-style salad made from chicken mince sautéed with lime, fish sauce, and herbs. It is served with steamed jasmine rice and crisp lettuce leaves for wrapping.

Ingredients

  • 500 g RSPCA Approved Chicken Mince
  • 1.5 cups jasmine rice
  • 1 each iceberg lettuce
  • 2 each lime
  • 3 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 each red onion
  • 10 g mint
  • 10 g coriander
  • 1 tsp chilli flakes
  • 2 cloves garlic
  • 2 stalks spring onion
  • 1 tbsp vegetable oil

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the package instructions and set aside.
  2. Separate the iceberg lettuce leaves, rinse thoroughly, and pat them dry. Set aside on a serving plate.
  3. Finely chop the red onion, garlic, mint, coriander, and spring onion.
  4. Heat vegetable oil in a large frying pan over medium heat. Add garlic and red onion. Sauté until fragrant.
  5. Add chicken mince to the pan and cook, breaking it up with a wooden spoon, until fully cooked and slightly golden.
  6. In a small bowl, mix fish sauce, lime juice (from 2 limes), brown sugar, and chilli flakes. Stir until the sugar dissolves.
  7. Pour the sauce mixture into the cooked chicken mince and toss to combine evenly.
  8. Remove the pan from heat and stir in the chopped mint, coriander, and spring onion.
  9. Serve the chicken larb warm alongside the cooked jasmine rice and lettuce cups.
  10. To eat, scoop a portion of the larb and rice into a lettuce leaf, wrap it up, and enjoy!
