Classic Roast Chicken with Veggies and Gravy

Ingredients

  • 1.6 kg RSPCA Approved Free Range Chicken Whole
  • 4 each potato
  • 0.8 kg pumpkin
  • 3 each carrot
  • 1 cup peas
  • 1 each brown onion
  • 4 cloves garlic
  • 3 tbsp plain flour
  • 0.5 litre chicken stock
  • 3 tbsp olive oil
  • 3 sprigs thyme

Instructions

  1. Preheat the oven to 190Β°C.
  2. Pat dry the RSPCA Approved Free Range Chicken with paper towels and place it in a large roasting tray.
  3. Drizzle the chicken with 1 tbsp olive oil, season with salt and pepper, rub minced garlic (2 cloves) and thyme sprigs on the skin.
  4. Cut potatoes, pumpkin, and carrots into even chunks. Place them around the chicken in the roasting tray. Drizzle the veggies with 1 tbsp olive oil and season with salt and pepper.
  5. Roast the chicken and vegetables in the preheated oven for 1 hour 30 minutes, basting every 30 minutes, or until the chicken is golden and cooked through (75Β°C internal temperature).
  6. Meanwhile, sautΓ© the finely diced onion and remaining minced garlic (2 cloves) with 1 tbsp olive oil in a saucepan until softened. Add flour and stir continuously to form a roux.
  7. Gradually whisk in chicken stock to the roux until smooth, cooking for a few minutes until thickened to desired gravy consistency. Season with salt and pepper to taste.
  8. Boil or steam green peas until tender, about 3-4 minutes, then set aside.
  9. Once the chicken and vegetables are cooked, let the chicken rest for 10 minutes before carving.
  10. Serve carved chicken with the roasted vegetables, peas, and drizzle of gravy.
