Ingredients

  • 500 g RSPCA Approved Chicken Breast Mince
  • 1 each brown onion
  • 10 g parsley
  • 70 g breadcrumbs
  • 1 each egg
  • 2 tbsp Worcestershire sauce
  • 800 g potato
  • 100 ml milk
  • 60 g butter
  • 2 tbsp plain flour
  • 1 each beef stock cube
  • 100 g frozen peas
  • 2 each carrot
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  1. In a large mixing bowl, combine the chicken breast mince, finely chopped brown onion, parsley, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix well until combined.
  2. Using your hands, shape the mixture into approximately 8 rissoles.
  3. Heat a large frying pan over medium heat and cook the rissoles in a little oil for 5 minutes per side or until golden brown and cooked through. Remove from the pan and keep warm.
  4. Peel and chop the potatoes into even-sized pieces. Boil them in salted water until tender, approximately 15 minutes. Drain and mash with milk and butter until creamy. Season with salt and pepper to taste.
  5. To make the gravy, sprinkle the plain flour into the pan with the rissoles and cook gently for a minute. Mix the beef stock cube with 500ml boiling water, then gradually add to the pan, stirring constantly, to make a smooth gravy. Simmer for 2–3 minutes until thickened.
  6. Slice the carrots and cook with the frozen peas in boiling water for 5–7 minutes until tender. Drain.
  7. Plate the mashed potatoes and place the rissoles on top. Pour over gravy and serve with a side of peas and carrots.
