Ingredients
- 1 each RSPCA Approved Medium Whole Chicken
- 4 slices white bread
- 1 each brown onion
- 1 bunch sage
- 1 bunch parsley
- 200 g butter
- 1 each eggs
- 100 ml milk
- 800 g potatoes
- 200 g green beans
- 1 tsp salt
- 0.5 tsp pepper
Instructions
- Preheat your oven to 180Β°C.
- Prepare the bread and onion stuffing by finely dicing the brown onion and placing it in a bowl.
- Tear the white bread into small pieces and add to the bowl with the onion.
- Chop fresh sage and parsley finely, add to the mixture.
- Melt 50g butter in a pan and pour it over the bread mixture.
- Crack the egg into the bowl. Add a splash of milk, salt, and pepper, then mix well with your hands until combined.
- Place the stuffing into the cavity of the RSPCA Approved Medium Whole Chicken and secure with kitchen twine or a skewer.
- Rub the outside of the chicken with 20g butter and season with salt and pepper.
- Place the chicken breast-side up in a roasting tray and roast in the preheated oven for 1.5 hours, or until the juices run clear when pierced.
- Meanwhile, peel and chop the potatoes and boil them in salted water until tender.
- Drain the potatoes, then add 100g butter and a splash of milk. Mash until smooth, adjusting the seasoning as needed.
- Trim the green beans and cook them in boiling water for 3-4 minutes until just tender.
- In a separate pan, melt 30g butter, toss the beans gently and season with a little salt and pepper.
- Let the chicken rest for 10 minutes before carving. Serve with the bread stuffing, buttery green beans, and creamy mash.
