Ingredients

  • 1 each RSPCA Approved Medium Whole Chicken
  • 4 each potatoes
  • 3 each carrots
  • 800 g pumpkin
  • 2 each brown onion
  • 3 cloves garlic
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 3 tbsp olive oil
  • 2 tbsp plain flour
  • 250 ml chicken stock
  • 30 g butter

Instructions

  1. Preheat oven to 200Β°C.
  2. Prepare the chicken by patting it dry with paper towels. Rub olive oil over the chicken and season generously with salt and pepper. Stuff with a sprig each of thyme and rosemary.
  3. Place the chicken into a roasting pan.
  4. Chop potatoes, carrots, pumpkin, and one onion into even-sized chunks. Toss with olive oil, remaining thyme, rosemary, crushed garlic, salt, and pepper. Arrange around the chicken in the roasting pan.
  5. Roast chicken and vegetables in the oven for approximately 1.5 hours, basting the chicken with its juices every 30 minutes, until the chicken reaches an internal temperature of 75Β°C and the vegetables are golden.
  6. Remove chicken and vegetables from the pan; allow chicken to rest for 10-15 minutes before carving.
  7. To make the gravy, finely dice the remaining onion. In a pan, melt butter and sautΓ© the onion until soft. Stir in plain flour and cook for 1-2 minutes to form a roux.
  8. Gradually add chicken stock, stirring constantly until smooth. Season with salt and pepper and simmer until thickened.
  9. Serve the carved chicken with roasted vegetables and gravy on the side.
