Ingredients
- 1 each RSPCA Approved Medium Whole Chicken
- 4 each potatoes
- 3 each carrots
- 800 g pumpkin
- 2 each brown onion
- 3 cloves garlic
- 2 sprigs thyme
- 2 sprigs rosemary
- 3 tbsp olive oil
- 2 tbsp plain flour
- 250 ml chicken stock
- 30 g butter
Instructions
- Preheat oven to 200Β°C.
- Prepare the chicken by patting it dry with paper towels. Rub olive oil over the chicken and season generously with salt and pepper. Stuff with a sprig each of thyme and rosemary.
- Place the chicken into a roasting pan.
- Chop potatoes, carrots, pumpkin, and one onion into even-sized chunks. Toss with olive oil, remaining thyme, rosemary, crushed garlic, salt, and pepper. Arrange around the chicken in the roasting pan.
- Roast chicken and vegetables in the oven for approximately 1.5 hours, basting the chicken with its juices every 30 minutes, until the chicken reaches an internal temperature of 75Β°C and the vegetables are golden.
- Remove chicken and vegetables from the pan; allow chicken to rest for 10-15 minutes before carving.
- To make the gravy, finely dice the remaining onion. In a pan, melt butter and sautΓ© the onion until soft. Stir in plain flour and cook for 1-2 minutes to form a roux.
- Gradually add chicken stock, stirring constantly until smooth. Season with salt and pepper and simmer until thickened.
- Serve the carved chicken with roasted vegetables and gravy on the side.
