Ingredients
- 500 g RSPCA Approved Chicken Breast Diced
- 1 each brown onion
- 1 each red capsicum
- 400 g tinned tomatoes
- 2 tbsp tomato paste
- 100 g black olives
- 2 tbsp olive oil
- 1 tsp dried oregano
- 4 cloves garlic
- 15 g parsley
- 1 loaf crusty bread loaf
- 50 g butter
Instructions
- Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until lightly browned. Remove and set aside.
- In the same skillet, add the remaining olive oil and sautΓ© the chopped brown onion until softened.
- Add the minced garlic and diced red capsicum to the skillet, and cook for a further 2 minutes.
- Stir in the tinned tomatoes, tomato paste, dried oregano, and black olives. Season with salt and pepper to taste.
- Return the chicken to the skillet, reduce the heat to low, and let it simmer for 20 minutes or until the chicken is cooked through and the sauce has thickened.
- In the meantime, prepare the garlic bread by mixing softened butter with minced garlic and chopped parsley. Spread it over the crusty bread loaf, then place it in a preheated oven at 180Β°C for 10 minutes until crisp and golden.
- Serve the chicken cacciatore hot with slices of freshly baked garlic bread on the side.
