Chicken Cacciatore with Garlic Bread

Ingredients

  • 500 g RSPCA Approved Chicken Breast Diced
  • 1 each brown onion
  • 1 each red capsicum
  • 400 g tinned tomatoes
  • 2 tbsp tomato paste
  • 100 g black olives
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 4 cloves garlic
  • 15 g parsley
  • 1 loaf crusty bread loaf
  • 50 g butter

Instructions

  1. Heat 1 tbsp of olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until lightly browned. Remove and set aside.
  2. In the same skillet, add the remaining olive oil and sautΓ© the chopped brown onion until softened.
  3. Add the minced garlic and diced red capsicum to the skillet, and cook for a further 2 minutes.
  4. Stir in the tinned tomatoes, tomato paste, dried oregano, and black olives. Season with salt and pepper to taste.
  5. Return the chicken to the skillet, reduce the heat to low, and let it simmer for 20 minutes or until the chicken is cooked through and the sauce has thickened.
  6. In the meantime, prepare the garlic bread by mixing softened butter with minced garlic and chopped parsley. Spread it over the crusty bread loaf, then place it in a preheated oven at 180Β°C for 10 minutes until crisp and golden.
  7. Serve the chicken cacciatore hot with slices of freshly baked garlic bread on the side.
