Ingredients

  • 500 g RSPCA Approved Chicken Breast Diced
  • 4 sheets shortcrust pastry
  • 100 g frozen peas
  • 1 each carrot
  • 1 stalk celery
  • 1 each brown onion
  • 2 tsp curry powder
  • 2 tbsp plain flour
  • 250 ml chicken stock
  • 300 g green beans
  • 50 g butter

Instructions

  1. Preheat the oven to 200Β°C and lightly grease four individual pie dishes.
  2. Dice the carrot, celery, and onion finely.
  3. In a large frying pan, melt half the butter over medium heat. Add the onion, carrot, and celery, and sautΓ© until softened.
  4. Add the diced chicken and cook until browned.
  5. Stir in the curry powder and cook for a minute until fragrant.
  6. Sprinkle the plain flour over the mixture and stir to coat.
  7. Gradually pour in the chicken stock, stirring constantly to avoid lumps, and let the mixture simmer until thickened.
  8. Stir in the frozen peas and cook for another 2 minutes. Remove from heat and allow the filling to cool slightly.
  9. Line the pie dishes with shortcrust pastry sheets, leaving some overhang, and fill with the chicken curry mixture.
  10. Cover each pie with another sheet of pastry, sealing and crimping the edges. Cut small slits on top for steam to escape.
  11. Brush the pastry tops with beaten egg or milk for a golden finish.
  12. Place in the oven and bake for 25-30 minutes, or until the pastry is golden and crisp.
  13. Meanwhile, bring a pot of water to a boil and blanch the green beans for 3-4 minutes.
  14. Drain and toss the beans in the remaining butter, seasoning to taste.
  15. Serve the golden chicken curry pies with the buttered green beans on the side.
