Ingredients
- 500 g RSPCA Approved Chicken Breast Diced
- 4 sheets shortcrust pastry
- 100 g frozen peas
- 1 each carrot
- 1 stalk celery
- 1 each brown onion
- 2 tsp curry powder
- 2 tbsp plain flour
- 250 ml chicken stock
- 300 g green beans
- 50 g butter
Instructions
- Preheat the oven to 200Β°C and lightly grease four individual pie dishes.
- Dice the carrot, celery, and onion finely.
- In a large frying pan, melt half the butter over medium heat. Add the onion, carrot, and celery, and sautΓ© until softened.
- Add the diced chicken and cook until browned.
- Stir in the curry powder and cook for a minute until fragrant.
- Sprinkle the plain flour over the mixture and stir to coat.
- Gradually pour in the chicken stock, stirring constantly to avoid lumps, and let the mixture simmer until thickened.
- Stir in the frozen peas and cook for another 2 minutes. Remove from heat and allow the filling to cool slightly.
- Line the pie dishes with shortcrust pastry sheets, leaving some overhang, and fill with the chicken curry mixture.
- Cover each pie with another sheet of pastry, sealing and crimping the edges. Cut small slits on top for steam to escape.
- Brush the pastry tops with beaten egg or milk for a golden finish.
- Place in the oven and bake for 25-30 minutes, or until the pastry is golden and crisp.
- Meanwhile, bring a pot of water to a boil and blanch the green beans for 3-4 minutes.
- Drain and toss the beans in the remaining butter, seasoning to taste.
- Serve the golden chicken curry pies with the buttered green beans on the side.
