Ingredients

  • 500 g Beef Diced
  • 600 g Potatoes
  • 400 g Carrots
  • 200 g Celery
  • 1 each Onion
  • 3 cloves Garlic
  • 400 g Canned Tomatoes
  • 500 ml Beef Stock
  • 1 tsp Thyme
  • 2 each Bay Leaf
  • 20 g Parsley
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 4 slices Crusty Bread

Instructions

  1. Heat 1 tablespoon of butter in a large pan over medium heat. Add diced beef in batches and brown on all sides. Remove and set aside.
  2. In the same pan, add another tablespoon of butter. Add chopped onions, minced garlic, diced carrots, and celery. SautΓ© for 5 minutes or until softened.
  3. Sprinkle flour over the vegetables and stir well to coat.
  4. Return the browned beef to the pan along with peeled and diced potatoes.
  5. Pour in canned tomatoes and beef stock. Add thyme, bay leaves, salt, and pepper.
  6. Bring the mixture to a simmer, then cover and transfer to a slow cooker or reduce the heat and let it gently simmer on the stovetop for about 3 hours.
  7. Stir occasionally, skimming off any fat. The stew is ready when the beef is tender and the sauce has thickened to your liking.
  8. Serve hot, garnished with fresh parsley, alongside crusty bread spread with butter.
