Ingredients
- 500 g Beef Diced
- 600 g Potatoes
- 400 g Carrots
- 200 g Celery
- 1 each Onion
- 3 cloves Garlic
- 400 g Canned Tomatoes
- 500 ml Beef Stock
- 1 tsp Thyme
- 2 each Bay Leaf
- 20 g Parsley
- 2 tbsp Butter
- 2 tbsp Flour
- 4 slices Crusty Bread
Instructions
- Heat 1 tablespoon of butter in a large pan over medium heat. Add diced beef in batches and brown on all sides. Remove and set aside.
- In the same pan, add another tablespoon of butter. Add chopped onions, minced garlic, diced carrots, and celery. SautΓ© for 5 minutes or until softened.
- Sprinkle flour over the vegetables and stir well to coat.
- Return the browned beef to the pan along with peeled and diced potatoes.
- Pour in canned tomatoes and beef stock. Add thyme, bay leaves, salt, and pepper.
- Bring the mixture to a simmer, then cover and transfer to a slow cooker or reduce the heat and let it gently simmer on the stovetop for about 3 hours.
- Stir occasionally, skimming off any fat. The stew is ready when the beef is tender and the sauce has thickened to your liking.
- Serve hot, garnished with fresh parsley, alongside crusty bread spread with butter.
