Ingredients
- 500 g Coles RSPCA Approved Chicken Mince
- 1 cup quinoa
- 100 g spinach
- 200 g cherry tomatoes
- 1 each cucumber
- 1 each lemon
- 2 tbsp olive oil
- 2 cloves garlic
- 1 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Rinse the quinoa thoroughly under cold running water and drain.
- In a medium saucepan, combine the quinoa and 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.
- While the quinoa cooks, heat 1 tablespoon of olive oil in a large frying pan over medium heat.
- Add minced garlic and chicken mince to the pan. Cook, stirring frequently, until the chicken is browned and cooked through, about 5β7 minutes.
- Sprinkle cumin, salt, and pepper onto the chicken mixture and stir well to evenly coat.
- Prepare the vegetables: cut cherry tomatoes in halves, slice the cucumber, and wash the spinach.
- In a small bowl, combine the juice of one lemon with the remaining olive oil, a pinch of salt, and pepper to make a simple dressing.
- To assemble, divide the quinoa into four serving bowls. Top each bowl with an equal portion of chicken mince, spinach, cherry tomatoes, and cucumber.
- Drizzle the lemon-olive oil dressing over the top of each bowl.
- Serve immediately and enjoy!
