Ingredients
- 1 each Coles RSPCA Approved Medium Whole Chicken
- 200 g Natural Yoghurt
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 tsp Ground Turmeric
- 100 g Tomato Puree
- 100 ml Cream
- 250 g Basmati Rice
- 2 tbsp Oil
- 1 large Onion
- 3 cloves Garlic
- 2 tsp Ginger
- 1 tsp Garam Masala
- 1 tsp Chilli Powder
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and removing any excess fat or skin.
- In a bowl, mix the yoghurt with ground cumin, ground coriander, ground turmeric, garam masala, chilli powder, and grated ginger. Add a pinch of salt.
- Add the chicken pieces to the yoghurt mixture and mix until well coated. Allow to marinate for at least 30 minutes or overnight.
- Heat a large frying pan or grill and lightly oil it. Cook the marinated chicken pieces until they are slightly charred but not fully cooked through. Remove and set aside.
- In the same pan, heat some more oil. Add finely chopped onion and cook until it becomes translucent.
- Add minced garlic and grated ginger and sautΓ© for an additional minute.
- Stir in the tomato puree and simmer for around 5 minutes to thicken.
- Pour in cream and a splash of water (if the consistency is too thick). Mix well.
- Add the semi-cooked chicken pieces back into the sauce. Allow to simmer for 10-15 minutes or until the chicken is fully cooked.
- Meanwhile, cook basmati rice according to the package instructions.
- Serve the Chicken Tikka Masala hot, garnished with fresh coriander if desired, along with the basmati rice.
