Ingredients

  • 1 each Coles RSPCA Approved Medium Whole Chicken
  • 5 cloves garlic
  • 3 tablespoons olive oil
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 each lemons
  • 500 g roast vegetables

Instructions

  1. Preheat your oven to 200Β°C.
  2. Pat the chicken dry with paper towels and place it on a roasting tray.
  3. In a small bowl, mix together minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and black pepper.
  4. Rub the garlic herb mixture all over the chicken, including under the skin if possible.
  5. Slice one lemon in half and place it inside the chicken cavity. Slice the second lemon and lay it around the chicken in the roasting tray.
  6. Arrange the mixed roast vegetables around the chicken in the tray.
  7. Drizzle the vegetables with a little olive oil and season with salt, pepper, and a sprinkle of rosemary and thyme.
  8. Place the chicken and vegetables in the preheated oven and roast for approximately 90 minutes, or until the chicken reaches an internal temperature of 75Β°C.
  9. Halfway through cooking, baste the chicken with its juices and stir the vegetables to ensure even roasting.
  10. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  11. Serve the carved chicken with the roasted vegetables on the side.
