Ingredients
- 1 each Coles RSPCA Approved Medium Whole Chicken
- 5 cloves garlic
- 3 tablespoons olive oil
- 2 sprigs rosemary
- 2 sprigs thyme
- 1 teaspoon salt
- 0.5 teaspoons black pepper
- 2 each lemons
- 500 g roast vegetables
Instructions
- Preheat your oven to 200Β°C.
- Pat the chicken dry with paper towels and place it on a roasting tray.
- In a small bowl, mix together minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and black pepper.
- Rub the garlic herb mixture all over the chicken, including under the skin if possible.
- Slice one lemon in half and place it inside the chicken cavity. Slice the second lemon and lay it around the chicken in the roasting tray.
- Arrange the mixed roast vegetables around the chicken in the tray.
- Drizzle the vegetables with a little olive oil and season with salt, pepper, and a sprinkle of rosemary and thyme.
- Place the chicken and vegetables in the preheated oven and roast for approximately 90 minutes, or until the chicken reaches an internal temperature of 75Β°C.
- Halfway through cooking, baste the chicken with its juices and stir the vegetables to ensure even roasting.
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
- Serve the carved chicken with the roasted vegetables on the side.
