Ingredients
- 500 g Coles RSPCA Approved Chicken Breast Diced
- 1 cup plain yogurt
- 1.5 tsp garam masala
- 1 tsp turmeric
- 1 tbsp ginger
- 2 cloves garlic
- 2 tbsp lemon juice
- 1 tsp salt
- 1 each skewers
- 2 each capsicum
- 1 each onion
- 0.5 each cucumber
- 0.5 bunch mint leaves
Instructions
- In a mixing bowl, combine plain yogurt, garam masala, turmeric, grated ginger, minced garlic, lemon juice, and salt.
- Add the diced chicken breast to the marinade and mix well. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for best results.
- Soak the skewers in water for 10 minutes to prevent them from burning during grilling.
- Cut capsicum and onion into chunks. Thread marinated chicken pieces onto skewers, alternating with capsicum and onion pieces.
- Preheat a grill or frying pan to medium-high heat. Cook the skewers, turning occasionally, for about 15-20 minutes or until chicken is cooked through.
- While the chicken is grilling, prepare a yogurt sauce by mixing plain yogurt with finely chopped cucumber and mint leaves. Season with salt.
- Serve the chicken tikka skewers hot with the yogurt sauce on the side.
