Coles chicken Mexican quick & easy

Succulent strips of chicken cooked with bell peppers and onions, served in soft tortillas and topped with fresh salsa and avocado.

Ingredients

  • 600 g Coles RSPCA Approved Chicken Stir Fry
  • 1 each red onion
  • 1 each green capsicum
  • 8 each tortillas
  • 1 each avocado
  • 150 g sour cream
  • 1 each lime
  • 1 tsp cumin
  • 1 tsp chilli powder
  • 2 tbsp olive oil
  • 2 cloves garlic

Instructions

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  2. Add the chicken stir fry strips and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, heat the remaining olive oil.
  4. Add sliced red onion, sliced green capsicum, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  5. Return the chicken to the skillet. Sprinkle cumin and chilli powder over the mixture and toss well to coat. Cook for another 2 minutes to blend the flavours.
  6. Warm the tortillas in a dry pan or microwave.
  7. To assemble, fill each tortilla with chicken and vegetable mix.
  8. Top with avocado slices, a dollop of sour cream, and a squeeze of lime. Serve immediately.
