Greek Lemon and Herb Chicken Thighs

Marinated in a zesty lemon-herb blend, these chicken thighs are roasted until golden, infused with Mediterranean flavours, and served with a side of roasted vegetables.

Ingredients

  • 4 cutlets Coles RSPCA Approved Chicken Thigh Cutlets
  • 2 tbsp lemon juice
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 3 tbsp olive oil
  • 4 each potatoes
  • 1 each capsicum
  • 2 each zucchini
  • 1 tsp salt
  • 0.5 tsp pepper

Instructions

  1. Preheat the oven to 200Β°C.
  2. In a small bowl, mix lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper to make a marinade.
  3. Place chicken thighs in a large bowl and pour over the marinade. Toss well to coat evenly. Let it sit for 10 minutes to marinate.
  4. Meanwhile, chop potatoes into wedges, capsicum into strips, and zucchinis into thick slices.
  5. Place the chopped vegetables on a large baking tray. Drizzle with olive oil, and season with salt and pepper. Toss to combine.
  6. Push the vegetables to one side of the tray and place marinated chicken thighs on the other side.
  7. Roast in the oven for 45 minutes, turning the vegetables halfway through cooking, until chicken is golden brown and cooked through, and vegetables are tender.
  8. Serve the Greek Lemon and Herb Chicken Thighs alongside the roasted vegetables.
