Ingredients
- 4 cutlets Coles RSPCA Approved Chicken Thigh Cutlets
- 2 tbsp lemon juice
- 3 cloves garlic
- 1 tsp dried oregano
- 3 tbsp olive oil
- 4 each potatoes
- 1 each capsicum
- 2 each zucchini
- 1 tsp salt
- 0.5 tsp pepper
Instructions
- Preheat the oven to 200Β°C.
- In a small bowl, mix lemon juice, minced garlic, dried oregano, olive oil, salt, and pepper to make a marinade.
- Place chicken thighs in a large bowl and pour over the marinade. Toss well to coat evenly. Let it sit for 10 minutes to marinate.
- Meanwhile, chop potatoes into wedges, capsicum into strips, and zucchinis into thick slices.
- Place the chopped vegetables on a large baking tray. Drizzle with olive oil, and season with salt and pepper. Toss to combine.
- Push the vegetables to one side of the tray and place marinated chicken thighs on the other side.
- Roast in the oven for 45 minutes, turning the vegetables halfway through cooking, until chicken is golden brown and cooked through, and vegetables are tender.
- Serve the Greek Lemon and Herb Chicken Thighs alongside the roasted vegetables.
