Ingredients

  • 800 g Coles Pork 3 Star Regular Mince
  • 200 g kimchi
  • 1 each capsicum
  • 1 each spring onion
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cups white rice

Instructions

  1. Heat a large non-stick pan or wok over medium-high heat and add sesame oil.
  2. Add minced garlic and sauté until fragrant.
  3. Add the Coles Pork Mince and cook until browned, breaking it up with a spoon.
  4. Stir in the sliced capsicum and cook for 3–4 minutes until slightly softened.
  5. Add the kimchi and soy sauce and stir to combine. Cook for another 2–3 minutes.
  6. Meanwhile, prepare your white rice as per packaging instructions, if not already cooked.
  7. Add chopped spring onions to the stir-fry just before turning off the heat.
  8. Serve the pork and kimchi stir fry over a bed of freshly cooked white rice. Enjoy!
